It's breakfast time once more, and we're happy to bring you this simple recipe for an awesome breakfast of Shakshuka, it tastes awesome, easy to make and you can adjust the recipie to what you have in the fridge, enjoy with a cup of fine coffee and your good to go!
- Cherry Tomatoes
- Tin of chopped tomatoes
- Balsamic Vinegar
- Fresh Coriander
- Feta Cheese
Heat up a frying pan, pop in some garlic, salt, pepper, chorizo and brown it all up, after that add the cherry tomatoes, chillies & peppers and get it working.
Once all that has been going for a few minutes, add a tin of tomatoes, honey, balsamic, coriander and a drop of water if it needs it, keep it on the heat for 15 minutes [you may need to add a bit mrs water to stop it drying out]. After this crack in the eggs, try not to do too many as it will crowd the pan, keep the heat on and poach the eggs in the pan.
One the eggs are almost done sprinkle over some fresh chopped coriander and crumble some feta cheese, cook for another minute to melt the cheese in and your done.
Enjoy with bread and butter straight from the pan.
